Thomas has a new rhyming phrase that he picked up while eating artichokes last night. Man, I love those things!
Yesterday was a gift of a day. The first normal feeling day all summer. The kids got along great, we only had a few errands to run, ME took a long nap, and I actually got to read and finish Monte Cristo. For the record, I am shocked that the movie Monte Cristo could use that name. The book was incredibly different from the movie!
I am going to take my camera to swim lessons today to get a few shots. Thomas is doing hand stands in the pool! It has been a great experience this year and I am glad that T isn't terrified of the water like M was at his age.
Busy day today, weekend, and week ahead of us! This is the fun part. I think I will still have a computer until the end of next week, so I will update the blog.
I leave you now with one of my favorite summertime recipes. I got this from Barefoot Contessa last year and it graces our dinnertable at least once a week in the summer. Chaio!
Corn Salad
5 ears corn
1 med. onion
3 T cider vinegar
3 T EVOO
S and P
Basil leaves
Shuck corn and boil for 3 minutes or until starchiness is just gone. Put ears into an ice bath.
Cut kernels off of cob and place in a bowl.
Dice onion and put in bowl.
Add next three ingredients.
Chiffonade basil leaves (However much you want. I like tons.) and add to bowl.
Chill and serve!
Had a thought.

I learned the hard way that
"Chiffonade basil leaves" means stack, then roll and slice leaves across the vein... I only learned this last year after searching the aisles of HEB looking for "Chiffonade Basil Leaves" and having the HEB chef laugh at me when I couldn't find them!:)
That's hilarious, Steph! I would have written out how to do it, but my coffee was done percolating and I wanted to end the post. Thanks for explaining!
That recipe sounds delicious!
I'm not a cook at all, so I'm glad to have the explanation of Chiffonade!
Landry says Okey-Dokey, Artichokey, too! What a coinky-dink! ;)
She's really into rhyming as well. Lately she has been wanting to read Dr. Seuss books before bed. The other night after we read "Green Eggs and Ham" and she was climbing into bed she said "This is my bed, it's so true. This is my bed, my bed so blue." Made me smile....
EVOO.....you're so Rachael Ray!!
You lost me at "Shuck"... but maybe when a little failry slips into the house unannounced and slams me over the head w/ a frying pan wand I'll pick up an ear of corn and say "Shucks!". Until then I'll drool over my latest celebrity crush ~ Mr. Bobby Flay ~ yummy to that!!!
This might go good with SG's turkey wraps--we are having later today--I LOVE fresh corn--any way you fix it!
I made your summer pie and LOVED it. It was a hit by all who scarfed it!!
So are you in the new house yet?
OOH, I made that corn salad and LOVED it....more please...happy moving!!
Just FYI~ Elizabeth moved a little sooner than expected and should be back on line by the middle of next week!
