Well, this one was very quiet and wonderfully boring! Since we spent well over one thousand dollars this past month between electric bill, water bill, and gas, we decided to have as close to a spend free weekend as possible! It was very enjoyable actually.
I cooked and froze about 8 meals. I am finishing the rest today. I just do much better with a stocked freezer! I also spent some time at my hair salon. I usually let my hair grow out for the summer so I can put it in a pony tail. Now, it is chopped above my shoulders and looks a little better.
I am enjoying the school year so far. I woke Matthew up at 7 on Friday morning and he said, "But I just went to sleep!" It is hard getting used to waking up early again! I feel like I can start over each school year and am making a list of "School Year Resolutions". So far I have better doing pretty well.
Thomas and ME start back to school tomorrow. I am going to start going up to work and reorienting myself to the paperwork/therapy techniques.
This is a recipe for our family's breakfast casserole. It is delicious anytime of year, but for some reason, we usually only eat it on Christmas morning. I made some for a church event recently and it was eaten up.
Breakfast (Holiday) Casserole:
Assemble the night before:
1 lb. ground sausage, cooked
4 1/2 C stale bread, cubed
2 C cheddar cheese
10 eggs, beaten
4 C milk
1 t. salt
1 t. dry mustard
1/2 t. onion powder
Optional additions: red or green peppers, basil, green onions, rosemary, ham, etc. You are only limited by your imagination!
Combine in 9X13 greased pan.
325 for 1 hour or until set.
Had a thought.

Hey, thanks for sharing the recipe. Gotta try it out! Just for fun I think you will get a kick out of visiting Lisa Whelchel's website. I visit hers every Monday. (She was "Blair" on the Facts of Life in case you aren't familiar with her). I think your family and hers just might have been at Schlitterbahn on the same day. Too funny! She is linked on my blog if you need her address. Thought you'd get a kick out of that! : )
Thanks, Elizabeth!
You make me want it to be Christmastime now!!
That's funny- my family uses the same recipe (or close to it) for Christmas morning and the first day of school. It's funny how many things are families have in common:)
I love spend-free weekends! About the breakfast casserole...I love ANY reason to make this. I always make it if we have "substantial" company...us plus three or more.
The recipe sounds great! Oh what I wouldn't have given for a quiet, boring weekend. Oh well, maybe we'll get one soon. Although it sounds like you were actually pretty busy with all of the cooking. Don't you just love freezing things? I just started doing that last year and it saves so much time. I love to come home and just pop something in the oven.
Okay, that should have said " Oh, what I would have given." I'm still asleep. :-)
Our family loves that breakfast casserole too, and use it any time we have company in town. It's so good!
Maybe your next blog can be all the different recipes you froze to eat later?! I always need new ideas of things that freeze well.
(There is a group of us who exchange frozen casseroles/ dinners at church, and that has been WONDERFUL to have a few stocked up at a time!)
I will be happy to, Chelsea. There were a few that I posted early this year that I have to dig up. One was Comfort Chicken Casserole and the other was New Year's Black Eyed Peas and Sausage. If you want to look for those, go right ahead. They are a perrenial favorite around here.
I will post a few more in the next few days.
